Muesli Cupcake

Bored by these winter, cold and rainy days? Why not give yourself to baking this afternoon, quit the diets for a day and try out these awesome muesli cupcakes. Invite some friends and enjoy them with a warm cup of tea. Let me know if you try cooking them, how it goes!

For 12 muesli cupcakes:

150g of cake flour
50g of self raising flour
125 of butter
150g of brown sugar
90g melted white chocolate
90g of molasse
2 small apples
1/2 spoon of vanilla extract
125ml of mil
1 egg
Muesli for topping

For the icing:
50g of granulated sugar
2 1/2 spoons of fresh cream
65g of butter
185g powdered sugar
250g of cheese like Philadelphia

Preparation: 40minutes

Heat the oven at 180°C. Peal the apples, and then cut them in pieces and cook them in a small pot with 3 spoons of water for 5-8 minutes with lid on. Crush them with a spoon. Pour the flour in a bowl, beat the butter and the sugar in a basin, add the melted chocolate, the mollase and mix. Add the egg and the vanilla, beat slowly for 30 seconds. Alternate the flour and milk with the rest. Distribute the mixture in a baking tin with 12 cups and put in oven for 20-25 minutes. Let it cool.

For the icing: cook the sugar mixed with two spoons of water in a pot, until its dark, without touching it. Add the cream and mix quickly. Let it cool. Put the butter in a bowl, beat it with a whisk, add the powdered sugar and the cheese, and beat for 2-3 minutes. Add the caramel and mix. Put everything in the fridge for 1 hour. Spread the icing on the cupcakes, pour some of the apples on top and spread some muesli.
